Slow Cooker Recipes We Love

I am hopeful that one day I will truly enjoy cooking, but in this season of life (with tiny children running around while I prepare dinner) it’s just not my favorite. Which is why I am so grateful for our slow cooker. We received it as a wedding gift, but it took several years for us to begin using it. Now, we use it weekly. We’re always trying new recipes, but below I’ve shared 8 of our tried and true favorites!

White Chicken Chili - We have been making this recipe for years. It’s a household favorite! We usually only make 1/2 of the recipe, and we always add a can of corn and cayenne pepper to taste. We serve it in a bowl over rice, topped with corn chips and shredded cheese.

Garlic Butter Chicken & Veggies - Such a comforting meal! Chicken, potatoes, and carrots, covered in a butter mixture. So. Good. The recipe calls for 1/2 a cup of butter (an entire stick), but we only use about 1/4 a cup (half a stick). I add 1/4 cup of chicken broth to the slow cooker to give a little more liquid in the pot.

Chicken Fajitas - My favorite trick for this meal is to buy pre-chopped peppers and onions so I don’t have to spend any time chopping. This is my favorite fajita recipe because the slow cooker makes the chicken so tender.

Meatball Vegetable Soup - This soup is very filling and perfect for a cold night. We substitute the zucchini for corn, and we also add some spices (oregano, basil, salt, and pepper).

Chicken Chili - While our slow cooker isn’t used as much in warmer months, this is the chili we like to make in the summer. The bell peppers and lime juice make it a perfect summer meal. We don’t add the refried beans that the recipe calls for.

Garlic Butter Chicken & Pasta - This is such a good one. Chicken, pasta, carrots, & peas. The perfect combination alongside the butter and spices. I’m not one to cook with an entire stick of butter, so I use half a stick and pour about 1/4 a cup of chicken broth over the top.

Santa Fe Chicken - Truly the easiest slow cooker meal. You probably already have all the ingredients on hand, and you just combine it all in the slow cooker. Cook on low for 8 hours & dinner is served! We serve with rice, corn chips, and shredded cheese.

Spaghetti Sauce - So simple to make with so many flavors. And it makes your home smell divine!
